Meena’s Zucchini & Squash Medley

Meena’s Zucchini & Squash Medley is a quick sauté that keeps the seasoning minimal. Zucchini and squash are the focus, with coriander, lime, and cilantro adding only a light frame.

The vegetables are first tossed over medium-high heat so they begin to soften and take on a little color. Ground coriander is added only after the first few minutes.

The pan is then covered briefly to finish the vegetables. Salt and lime juice are stirred in at the end, and cilantro is used as a fresh garnish.

Ingredients

  • 1–2 tablespoons olive oil
  • 2 cups zucchini, diced
  • 2 cups squash, diced
  • 1 teaspoon ground coriander
  • Salt to taste
  • Juice of 1/2 lime
  • 1/4 cup fresh cilantro leaves, chopped

Method

Heat the olive oil in a frying pan over medium-high heat. Add the zucchini and squash and sauté for 4–5 minutes, tossing regularly. Reduce the heat to medium, add the coriander, stir, cover, and cook for another 5–7 minutes until the vegetables are soft. Add salt and lime juice, toss gently, garnish with cilantro, and serve. Makes 2–4 servings.
