French Bean & Tomato Cumin Sauté

French Bean & Tomato Cumin Sauté is a fast skillet dish with French green beans, tomato, onion, cumin, turmeric, and cayenne. The beans are cooked just until tender rather than simmered for a long time.

Cumin seeds are heated first, then onion is sautéed briefly before tomato and beans are added with the remaining spices. The covered pan traps enough steam to finish the vegetables.

The source allows a small amount of water if the pan becomes too dry. Otherwise the tomatoes provide most of the moisture for this short cooking method.

Ingredients

  • 2 teaspoons coconut oil or other good oil
  • 1 1/2 teaspoons whole cumin seeds
  • 1/3 cup onions, chopped
  • 1/2 cup tomatoes, chopped
  • 1 1/2 cups long French green beans
  • 1/2 teaspoon turmeric
  • 1/4–1 teaspoon cayenne pepper
  • Salt to taste

Method

Heat the oil in a large frying pan over medium-high heat. Add the cumin seeds and let them sizzle for 30 seconds. Add the onions and sauté for 1–2 minutes. Reduce the heat to medium, then add the tomatoes, beans, turmeric, cayenne, and salt. Stir, cover, and cook for 5–10 minutes until the beans are tender. If the pan needs more liquid, add up to 1/4 cup water. Makes 2 servings.
