Matteo’s Simply Delicious Asparagus

Matteo’s Simply Delicious Asparagus uses a two-stage method: a short boil to soften the spears, followed by a brief broil with ghee and Parmesan.

The asparagus is intentionally kept slightly crisp after boiling. That prevents it from becoming too soft during the final oven stage.

Ghee, Parmesan, salt, and pepper provide all of the seasoning. The broiler is used only until the cheese begins to brown, so the dish comes together quickly.

Ingredients

  • 1 bunch thin asparagus
  • 1 tablespoon ghee or butter
  • 1/4 cup Parmesan cheese, grated
  • Salt to taste
  • Freshly ground pepper to taste

Method

Set the oven to broil. Bring a large pot of water to a boil, add the asparagus, reduce the heat to medium-high, and cook for 4–5 minutes until the spears begin to soften but remain crisp. Drain and transfer the asparagus to a baking dish. Dot with ghee or butter, sprinkle with Parmesan, salt, and pepper, and broil for 2–3 minutes until the cheese begins to brown. Serve immediately. Makes 4 servings.
