Basia’s No Fuss French Green Beans
Basia’s No Fuss French Green Beans keeps the beans crisp by blanching them briefly and immediately cooling them in iced water. The dressing and toppings are added only after that cooking is stopped.
Red bell pepper, red onion, and crumbled goat’s cheese bring color and texture, while olive oil, balsamic vinegar, lemon, and mustard create a sharp dressing.
Because the beans are not returned to heat, the final dish stays bright and fresh. The source also offers a variation with sautéed onion for a softer flavor.
Ingredients
- 5 cups French green beans
- 6 cups iced water
- 1 cup red bell peppers, finely diced
- 1/2 cup red onions, finely diced
- 1/2 cup goat’s cheese, crumbled
- 4–5 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- Juice of 1/2 lemon
- 1/4 teaspoon dry mustard, or 1 teaspoon Dijon mustard
- Salt to taste
- Freshly ground pepper to taste
Method
Bring a large pot of water to a boil, add the beans, reduce the heat to medium-high, and blanch for 3–5 minutes until tender and bright green. Transfer immediately to iced water to stop the cooking, then drain well. Place the beans in a serving bowl and add the bell pepper, red onion, goat’s cheese, olive oil, balsamic vinegar, lemon juice, mustard, salt, and pepper. Toss thoroughly, check the seasoning, and serve. Makes 6–8 servings.
