Tofu Scramble with Tomato, Cilantro & Turmeric
A tofu scramble succeeds or fails on texture before it succeeds or fails on seasoning.
The source makes an unusually useful suggestion: use tofu that has been frozen, thawed, and then crumbled.
Freezing changes tofu's structure. In this recipe, that makes it easier to break apart and gives the seasonings more surface to cling to.
Ingredients
Makes 2–4 servings
- 1 tsp ghee
- 1 tbsp onion, chopped, optional
- 1 tbsp fresh cilantro leaves, chopped, or fresh parsley
- 1/4 cup tomatoes, diced
- 1/4 tsp fresh green chili, minced
- 1/4 tsp turmeric
- salt to taste
- 2 cups medium tofu, frozen, thawed, and crumbled
- 1 tsp water
Method
Melt the ghee in a medium frying pan over medium heat.
Add the onion, cilantro or parsley, tomato, green chili, turmeric, and salt.
Sauté for about 2 minutes.
Add the crumbled tofu and the water.
Continue cooking for another 2–3 minutes, stirring as needed, until most of the liquid has been absorbed.
Serve hot.
Why frozen tofu works well here
Fresh medium tofu can break unevenly.
Frozen-and-thawed tofu behaves differently.
Its structure becomes more open and crumbly, which suits a scramble. Instead of trying to force smooth cubes into an egg-like shape, the recipe starts with tofu that naturally separates into irregular pieces.
That is a technique worth remembering beyond breakfast.
Build flavor before adding the tofu
The aromatics and vegetables enter the pan first.
That matters because tofu itself is mild.
By giving tomato, herbs, chili, turmeric, and optional onion a short head start in the ghee, the pan develops flavor before the tofu arrives.
The tofu then absorbs what is already there.
A teaspoon of water is enough
The recipe uses very little added liquid.
That small amount helps the tofu and seasonings come together without turning the pan wet.
The final instruction is to cook until most of that liquid is absorbed, so the finished scramble stays moist but not watery.
The dish works because texture and sequencing are handled deliberately.
