Tofu Veggie Breakfast Wrap

A good breakfast wrap has two jobs.

The filling has to taste complete on its own.

And it has to stay inside the tortilla.

This recipe handles both by cooking the vegetables and tofu until most of their liquid has been absorbed, then melting mozzarella directly onto the tortillas before the filling is rolled inside.

Ingredients

Makes 2 servings

  • 1 tbsp extra-virgin olive oil
  • 1/2 onion, finely sliced lengthwise
  • 3/4 cup red bell pepper, finely sliced lengthwise
  • 1/2 cup broccoli florets and stems, chopped
  • 1/3 cup tofu, cubed or crumbled
  • salt and freshly ground pepper to taste
  • 1/4 tsp turmeric
  • chili sauce to taste
  • 2 tortillas
  • 4 slices mozzarella cheese
  • 1/4 cup fresh cilantro leaves, chopped

Method

Heat the olive oil in a large frying pan over medium-high heat.

Add the onion, red pepper, and broccoli. Sauté for about 2 minutes, stirring frequently.

Cover the pan, reduce the heat to medium-low, and let the vegetables steam in their own moisture for another 2–3 minutes.

Add the tofu, salt, pepper, turmeric, and chili sauce.

Return to medium heat and cook for about 2 minutes, until the tofu has absorbed most of the liquid.

Remove the pan from the heat.

Arrange the tortillas on a baking sheet and place two mozzarella slices along the center of each.

Melt the cheese briefly under the broiler.

Transfer each tortilla to a plate. Divide the tofu filling between them, keeping about 1 1/2 inches clear at the bottom.

Sprinkle with cilantro.

Fold the bottom edge upward to form a base, then roll the sides around the filling.

Moisture control makes the wrap portable
