Simple Olive Oil & Balsamic Vinegar Dressing is exactly what the title promises: olive oil, balsamic vinegar, salt, and pepper with nothing added to distract from them.

Because the formula is so short, the quality of the oil and vinegar matters more than it would in a dressing loaded with mustard, herbs, or sweetener.

The ratio favors olive oil but leaves enough balsamic to remain clearly acidic. Shake the mixture well just before use because it will naturally separate as it stands.

Ingredients

  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • Salt and freshly ground pepper to taste

Method

Combine the olive oil, balsamic vinegar, salt, and pepper in a jar. Shake vigorously until temporarily emulsified, then taste and adjust the seasoning. Shake again just before serving if the dressing has separated. Makes about 1 cup.
