Cumin Raita

Cumin Raita is a minimal yogurt condiment seasoned with coarsely crushed cumin and optional salt, then finished with cayenne and fresh herbs.

The cumin is intentionally kept coarse rather than ground to a fine powder. That gives the raita visible flecks and a more distinct cumin texture.

The recipe requires no cooking. Once the yogurt, cumin, and salt are mixed, the cayenne and mint or cilantro are added as the final garnish.

Ingredients

  • 1 cup plain yogurt
  • 1/4 teaspoon whole cumin seeds, crushed
  • 1/4 teaspoon salt, optional
  • Pinch of cayenne pepper, for garnish
  • 1 sprig fresh mint or cilantro leaves, for garnish

Method

Combine the yogurt, crushed cumin, and optional salt in a bowl. Sprinkle with cayenne and garnish with fresh mint or cilantro. To crush the cumin, keep it coarse rather than powdering it. Makes 1 cup.
