Raita as Contrast: Cooling, Creamy and Acidic
Raita gives the cookbook a creamy, yogurt-based counterpoint to spiced curries, dals, rice dishes, and snacks. Cumin, cucumber, tomato-raisin, spinach, and coconut-banana versions all start from that same broad idea.
The add-ins change texture and balance. Cucumber is salted and drained before mixing, spinach is blanched and squeezed, raisins are soaked, and mustard seeds are popped for the coconut-banana version.
That preparation prevents the yogurt from becoming watery and lets each garnish or tempering stay distinct. Cayenne, cumin, cilantro, mint, coconut, or fruit then provide the final contrast.

- Plain yogurt
- A prepared main ingredient such as cucumber, spinach, tomato, banana, or raisins

- Cumin or mustard seeds where used
- Fresh cilantro or mint
- Cayenne or another small garnish
Method
Prepare the add-in first so excess water or raw texture does not dilute the yogurt. Fold it into the yogurt, season, then finish with the source’s garnish or tempering. Chill when the specific raita recipe calls for resting time.
