Winter Tea

Winter Tea layers ginger, lemongrass, cardamom, cloves, cinnamon, and turmeric into a large pot of water.

The whole mixture is brought to a boil before simmering for five to ten minutes. As with several seasonal teas in the book, the simmer time controls the strength.

The source notes that the same spices can be used for another round by adding more water. The tea is strained before serving.

Ingredients

  • 2 ginger tea bags, or 1 tablespoon fresh ginger, chopped
  • 2 sticks lemongrass
  • 2–3 cardamom pods, slit at the end
  • 2–3 cloves
  • 2 cinnamon sticks, or 4–5 pieces cinnamon bark
  • 1/2 teaspoon turmeric
  • 8–10 cups water

Method

Combine all ingredients in a large pot over high heat and bring to a boil. Reduce the heat and simmer for 5–10 minutes, depending on the strength desired. Strain and serve. The source notes that more water can be added to the same simmering ingredients for a second batch. Makes 8–10 servings.
