Thai Godot Salad

Thai Godot Salad is a large, highly textured bowl built from tender spinach, crisp peppers, sprouts, snap peas, cabbage, herbs, and crushed nuts.

The recipe works because no single vegetable dominates. Cilantro and Thai basil add a strong fresh note, while pecans or cashews bring enough richness to balance the raw vegetables.

The source pairs the salad with its Thai Salad Dressing rather than seasoning the vegetables separately. Toss only when ready to serve so the leaves and snap peas stay lively.

Ingredients

  • 6 cups baby spinach leaves
  • 1 cup red bell peppers, chopped
  • 1 cup yellow bell peppers, chopped
  • 1/2 cup red onions, sliced
  • 1 cup bean sprouts
  • 1 cup sugar snap peas, ends trimmed and strings removed
  • 1/2 cup pecans or cashews, crushed
  • 3/4 cup fresh cilantro leaves, chopped
  • 3/4 cup Thai basil, chopped
  • 1 cup Chinese curly cabbage, shredded

Method

Place all of the vegetables, herbs, sprouts, snap peas, and crushed nuts in a large bowl. Toss together gently, add Thai Salad Dressing, and toss again until evenly coated. Serve immediately. Makes 6–8 servings.
