Sooji Halwa

Ingredients

  • ¼ cup white sooji
  • 1¼ cups water
  • ½ cup sugar
  • 5 pinches cardamom powder
  • 3 tbsp ghee
  • 5 cashews
  • 10 raisins

Method

  1. Roast the sooji with 1 tbsp ghee in a pan until the colour turns slightly dark and gives a roasted aroma. Set aside.
  2. Boil the water and sugar together until the sugar is dissolved. Add the cardamom powder to the syrup.
  3. Slowly add this sugar syrup to the roasted sooji while stirring continuously. Add 1½ tbsp ghee to the pan and keep stirring until it starts to thicken. Ensure no lumps are formed.
  4. Cook the halwa on low heat until it leaves the sides of the pan.
  5. Meanwhile, heat the remaining ghee in a small pan and fry the cashews and raisins.
  6. Add the cashews and raisins to the halwa along with the ghee and serve.
