Savory Dokra Squares
Savory dokra squares are built from a simple semolina-and-yogurt batter, but the result depends on timing. The leavening goes in at the end, so the batter should move quickly from bowl to cooking dish.

Ingredients
- 1 cup cream of wheat
- Salt to taste
- 1 teaspoon canola oil
- 1/4 teaspoon turmeric
- 1/2 teaspoon whole cumin seeds, lightly crushed
- 1–2 tablespoons chopped fresh cilantro
- 1 1/2 teaspoons lemon juice
- 1 cup plain yogurt
- 1/4 cup water
- 1 heaping teaspoon Eno Fruit Salt
Method
Combine the semolina, salt, oil, turmeric, cumin, cilantro, lemon juice, yogurt and water until evenly mixed. Transfer to a shallow microwave-safe dish, quickly stir in the Eno, cover, and cook on high for about 8 minutes. Rest for at least 4 minutes before cutting into squares or diamonds. Serve warm or at room temperature with chutney.
