Palak and Mushroom Salad

Ingredients

  • 3 cups baby spinach leaves (palak), washed, dried, stems removed
  • 16-18 button mushrooms, medium-sized, washed, halved
  • 2 cucumbers, peeled, chopped into small pieces
  • 3 tomatoes, finely chopped
  • ½ lemon
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper powder to taste

Method

  1. If desired, cook the mushrooms lightly until brown with oil, pepper, and any herb.
  2. Tear the spinach leaves into bite-sized pieces and place in a deep bowl with the mushrooms.
  3. Add the cucumbers and tomatoes to the bowl.
  4. In a separate bowl, mix the juice of the lemon, olive oil, salt and pepper powder.
  5. Pour the dressing over the salad and toss well. Serve.
