Mexican Brunch with Refried Beans, Eggs & Salsa

This brunch is assembled rather than mixed.

A warm corn tortilla forms the base. Refried beans create the first layer. A fried egg sits on top. Salsa, yogurt, and cilantro finish the plate.

The order matters because each component keeps its own texture while contributing to the whole.

Ingredients

Makes 4 servings

  • 1 cup refried beans
  • 4 tsp ghee, butter, or another suitable cooking oil
  • 4 eggs
  • 4 corn tortillas
  • 1/2 cup salsa
  • 4 heaping tbsp plain yogurt
  • 4 tsp fresh cilantro leaves, chopped, or parsley

Method

Preheat the oven to 300°F / 150°C.

Warm the refried beans gently in a small pot over low heat.

Heat the ghee or butter in a large frying pan over medium heat.

Cook the eggs sunny-side up or over easy.

While the eggs cook, warm the corn tortillas under the broiler for about 2 minutes.

Place one tortilla on each serving plate.

Spread each tortilla with one quarter of the refried beans.

Top with an egg.

Add a spoonful of salsa and a tablespoon of yogurt.

Finish with chopped cilantro and serve.

Assembly protects texture

If the beans, salsa, yogurt, and egg were stirred together, the dish would lose much of its contrast.

Layering keeps the tortilla warm, the beans soft, the egg intact, and the toppings fresh.

That makes every bite adjustable.

Warm the tortilla separately

The tortilla is heated under the broiler rather than in the same pan as the eggs.

That is useful because the two ingredients need different treatment.

The eggs benefit from controlled pan heat. The tortilla only needs to warm and soften.

Salsa and yogurt work as opposites

Salsa contributes acidity, spice, and freshness.

Yogurt brings coolness and softness.

Their contrast keeps the beans and eggs from feeling too heavy.
