Everyday Salad Dressing
Everyday Salad Dressing is a balanced, flexible vinaigrette made from equal parts olive oil and lemon juice or rice vinegar, with garlic, maple syrup, and Dijon.
The garlic and mustard give the dressing definition, while the small amount of maple syrup rounds the acidity without turning the mixture noticeably sweet.
The source rests the dressing for at least thirty minutes before use. If it has been refrigerated, bringing it back toward room temperature loosens the olive oil again.
Ingredients
- 1/4 cup extra-virgin olive oil
- 1/4 cup lemon juice or rice vinegar
- 1 teaspoon garlic, minced
- 1 teaspoon maple syrup, or to taste
- 1 teaspoon Dijon mustard
- Salt and freshly ground pepper to taste
Method
Combine all ingredients in a jar and shake thoroughly until blended. Let the dressing stand for 30 minutes or longer before using so the flavors settle. If refrigerated, allow it to sit at room temperature before serving so the oil becomes fluid again. Makes about 1/2 cup.
