Daikon Tea
Daikon Tea is one of the simplest beverages in the cookbook, made only from roughly chopped daikon and hot water.
The daikon and water are brought to a boil together, then the heat is lowered so the root can simmer gently.
After 15–20 minutes, the tea is removed from the heat and strained. No sweetener, spice, or garnish is added in the source recipe.
Ingredients
- 1/4 daikon, roughly chopped
- 4 cups hot water
Method
Combine the chopped daikon and hot water in a large pot over high heat. Bring to a boil, reduce the heat, and simmer for 15–20 minutes. Remove from the heat, strain, and serve. Makes 3–4 cups.
