Building an Ayurvedic Spice Pantry
The cookbook’s basic spice list is compact but versatile: bay leaf, black pepper, cardamom, cayenne, red chilies, cinnamon, cloves, coriander, cumin, curry leaves, fennel, fenugreek, garam masala, mustard seeds, and turmeric recur across the recipes.
Fresh aromatics sit beside the dry pantry rather than replacing it. Cilantro, green chilies, garlic, and ginger are the principal fresh seasonings named in the Getting Started section.
The practical pattern is to keep a stable dry-spice core and buy the fresh aromatics regularly. That gives the recipes enough range for dals, curries, rice dishes, soups, chutneys, snacks, and beverages without requiring an oversized spice collection.

Method

Store whole spices well sealed, keep small quantities of ground spices, and replenish fresh ginger, garlic, cilantro, and chilies as needed. Add specialty spices only when the recipes you actually cook call for them.
