Autumn and Early Winter: Grounding Through Food

The cookbook describes fall and early winter as Vata season, a period it associates with movement and recommends balancing through warmer, grounding foods.

The Warming Autumn menu follows that idea with baked pakoras, chutney, winter tea, chapatis, vegetable rice pilau, green beans, red masoor dal, salad, cumin raita, and sweet shikand.

The meal is substantial without being one-note. Warm grains, dal, vegetables, and bread are balanced by salad, yogurt, and chutney so the grounding quality comes from structure rather than sheer heaviness.

Ingredients

  • A warm grain or pilau
  • A dal
  • Cooked vegetables
  • Chapati or another bread
  • A fresh salad
  • Raita and chutney
  • A warming tea

Method

Build the table around warm cooked staples first, then add a small amount of fresh salad and cultured or acidic condiments for contrast. Choose spices and textures that make the meal feel settled and coherent rather than overly dry or scattered.
