A Six-Taste Dinner Party: How to Build the Menu

The cookbook’s menu-plan section says a larger Indian-style party meal can include an appetizer with chutneys, seasonal drinks, several vegetable dishes, a protein dish such as dal or beans, pickles, raita, salad, and dessert.

It also recommends using the six tastes—sweet, sour, salty, pungent, bitter, and astringent—as a planning lens. Those tastes do not need equal portions because condiments and side dishes can supply small missing notes.

The Summer Dinner Party demonstrates the structure with samosas, chutney, cooling drinks, paneer, dal, eggplant, rice, chapatis, raw salad, mango chutney, raita, pudding, and fennel seed after the meal.

Method
