Veggie Boost

Ingredients

  • 3 tomatoes, halved, seeds discarded, chopped into ½"-square pieces
  • 2 yellow zucchinis, cut into ½"-square pieces
  • ½ head iceberg lettuce, torn into bite-sized pieces
  • 2 cups Chinese cabbage, chopped, cut into ½"-square pieces
  • Lemon juice to taste
  • Olive oil to taste
  • Salt to taste
  • Black pepper powder to taste

Method

  1. Put the tomatoes, zucchini, lettuce and Chinese cabbage in a deep bowl.
  2. In a separate bowl, mix the lemon juice, olive oil, salt and pepper powder.
  3. Pour the dressing over the salad and toss well. Serve.
