Tridoshic Salad Dressing

Tridoshic Salad Dressing is intentionally spare: light olive oil, rice vinegar, salt, and pepper. There is no sweetener, mustard, garlic, or heavy seasoning.

That restraint makes the dressing useful with vegetables whose own flavor should remain obvious, particularly daikon, carrot, endive, or watercress.

The technique is equally simple. Because there are so few ingredients, shake thoroughly and taste the balance of vinegar, oil, salt, and pepper before serving.

Ingredients

  • 1 tablespoon light olive oil
  • 1/4 cup rice vinegar
  • Salt and freshly ground pepper to taste

Method

Place the olive oil, rice vinegar, salt, and pepper in a jar. Shake until evenly combined, taste, and adjust the seasoning if needed. Use with raw vegetables or bitter greens. Makes about 1/4 cup.
