Spelt Oatmeal Bread: Bread Machine Version simplifies the preceding oatmeal bread into a single-machine loaf. The oats are still softened with boiling water before the other ingredients are added.
The oat mixture must cool from boiling to warm before the remaining ingredients go into the bread machine. The source leaves the exact ingredient order to the machine manufacturer’s instructions.
The loaf is baked on the light setting. This version keeps the spelt-and-oat character of the original while removing the hand-kneading and separate rise steps.
Ingredients
- 1/2 cup old-fashioned oats
- 1 cup boiling water
- 2 tablespoons butter
- 1 1/2 teaspoons salt
- 3 tablespoons honey
- 1 tablespoon dark molasses, optional
- 1 large egg, lightly beaten
- 3 cups light spelt flour
- 2 teaspoons active dry yeast
Method
Place the old-fashioned oats in the bread machine’s mixing bowl and pour the boiling water over them. Let the oats cool until they are still warm but no longer hot. Add the butter, salt, honey, optional molasses, beaten egg, spelt flour, and yeast in the order recommended by the bread machine manufacturer. Select the light crust setting and bake according to the machine’s program. Makes 1 loaf.
