Pungency: Heat, Aroma and Appetite

Pungency in the cookbook is broader than chili heat. Ginger, garlic, black pepper, mustard, chilies, and other aromatics can all create a sharp, warming sensory effect.

The recipes use those ingredients in different forms and stages. Mustard seeds pop in oil, ginger and garlic sauté with onions, black pepper may finish a dish, and fresh or dried chilies provide adjustable heat.

That layering matters because a dish can be aromatic and pungent without being aggressively hot. The source frequently allows chili quantities to be reduced while preserving the rest of the spice structure.
