Late Spring and Summer: Cooling the Plate
The cookbook places late spring and summer in Pitta season and recommends lighter, cooling, less spicy foods, with more fruit and salads, within its traditional Ayurvedic framework.
The Summer Dinner Party menu still includes substantial Indian dishes—palak paneer, masoor dal, eggplant bharta, basmati rice, and chapatis—but surrounds them with raw salad, mango chutney, tomato-raisin raita, and cooling drinks.
That balance matters more than making every dish cold. A summer table can still contain cooked food while using fresh, juicy, acidic, and yogurt-based components to keep the overall meal lighter.
Ingredients
- A cooked vegetable or paneer dish
- A dal
- Basmati rice or chapati
- A raw salad
- Raita or chutney
- A cooling tea or water-based drink
- Fruit-forward or light dessert
Method
Keep the cooked center of the meal, but reduce unnecessary heaviness and heat. Add raw vegetables, yogurt-based sides, fruit, herbs, and lighter drinks so the plate has several cooling or refreshing elements around the warm dishes.
