Grinding Spices Fresh: Aroma Versus Convenience
The cookbook compares freshly ground spices to freshly ground coffee: once the spice is broken down, aroma is released and begins fading faster.
Its practical guidance is to keep whole dry spices longer and grind as needed. Whole spices may be frozen for extended storage, while ground spices are kept for a shorter period.
The garam masala method demonstrates the workflow: toast, cool, remove unusable pod material where necessary, then grind the spices into a fine powder and store airtight.
Ingredients
- Whole dry spices
- A grinder reserved for spices
- A small airtight container
- A dry skillet or oven when the spice is toasted first
- Small batch sizes
Method
Grind only enough for the period in which the aroma will remain useful. If the recipe benefits from toasted spice, toast first and cool completely before grinding. Clean the grinder between strong spices so one blend does not unintentionally flavor the next.
