Cumin Scrambled Eggs

Cumin changes scrambled eggs before the eggs even enter the pan.

The source recipe begins by sizzling whole cumin seeds in hot fat for about 30 seconds. Only then are the beaten eggs added.

That brief step is enough to give an ordinary scramble a completely different aroma.

Ingredients

Makes 2–4 servings

  • 4 eggs
  • 2 tsp water
  • 2 tsp oil, or a mixture of butter or ghee and olive oil
  • 1/2 tsp whole cumin seeds
  • 1/4 tsp turmeric
  • 1/2 tsp salt, or to taste

Method

Beat the eggs with the water in a medium bowl and set aside.

Heat the oil in a frying pan over medium-high heat.

Add the cumin seeds and let them sizzle for about 30 seconds.

Pour in the eggs while stirring constantly.

Add the turmeric and salt.

Continue cooking for 1–2 minutes, until the eggs are no longer runny.

Serve immediately.

Bloom the cumin first

Whole spices often reveal more of themselves when they meet hot fat before the main ingredient arrives.

That is exactly what happens here.

The cumin is not buried inside the egg mixture from the beginning. It gets a short moment on its own, allowing its aroma to develop in the pan.

Water keeps the eggs loose

The recipe adds only a small amount of water to the eggs.

It is enough to loosen the mixture without turning it watery.

That helps the eggs spread quickly once they hit the hot pan.

Turmeric is used as seasoning

The source includes turmeric, but for this article the useful point is culinary rather than medicinal.

A small amount changes both color and flavor.

Because cumin is already prominent, the turmeric remains supporting rather than dominant.

The dish works because the spices are handled in sequence.

Cumin first, eggs second, turmeric and salt as the scramble comes together.
