Cilantro Mint Chutney
Cilantro Mint Chutney is a bright green blend of fresh cilantro, mint, lime, salt, oil, and optional agave, processed to a pulpy rather than perfectly smooth texture.
The recipe uses a large proportion of fresh herbs, so the flavor comes primarily from cilantro and mint rather than dried spices. Lime supplies the sharpness and helps loosen the blend.
If the chutney is too chunky, the source suggests adding a little more olive oil or lime juice while blending. A thin layer of oil can also be added for refrigerated storage.
Ingredients
- 2 bunches fresh cilantro leaves, about 6 cups
- 1 bunch fresh mint leaves, about 3 cups
- 2 teaspoons salt, or to taste
- 3 tablespoons olive or grapeseed oil
- 6 tablespoons lime juice, from about 1–2 limes; lemon may be used
- 1 tablespoon agave nectar, optional
- 1–2 teaspoons olive oil, optional, for preserving
Method
Combine the cilantro, mint, salt, oil, lime juice, and optional agave in a blender or food processor and blend to a pulp. If the chutney is too chunky, add 1–2 tablespoons more olive oil or lime juice while blending. For storage, place in a sealed container and optionally add 1–2 teaspoons olive oil over the surface.
