Chapati Dough: Flour, Water, Heat and Practice

Mix the flour and salt, work in the ghee or oil, then add boiling water and stir. Cool enough to handle, knead smooth, rest 5 minutes, knead again, divide into balls, and roll thinly. Cook on a dry medium-high pan about 1 minute per side, pressing the edges gently as bubbles appear.
