Breakfast Pasta with Mushrooms & Parmesan

For the custard:

  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup vegetable stock
  • 1/4 cup grated Parmesan cheese, for finishing

Method

Bring a large pot of water to a boil.

Add the pasta and salt, then cook according to the package directions until al dente.

While the pasta cooks, warm the ghee or butter in a large frying pan over medium heat.

Add the onion and mushrooms and sauté for about 4–5 minutes, until the mushrooms are soft.

Stir in the Italian seasoning, chilies or hot sauce, Worcestershire sauce, salt, and pepper.

In a separate bowl, beat the eggs, milk, and vegetable stock until well combined.

Drain the cooked pasta and add it to the frying pan.

Mix well, then reduce the heat to medium-low.

Pour in the egg mixture and stir constantly for about 3–4 minutes, keeping the mixture saucy rather than allowing it to set into scrambled eggs.

Stir in the Parmesan, add more freshly ground pepper if desired, and serve immediately.
