Banana, Oat & Berry Muffins

Banana, Oat & Berry Muffins combine whole wheat flour, cereal or oats, banana, berries, flax, wheat germ, and a modest amount of oil in a straightforward muffin batter.

The dry ingredients are mixed in one bowl while the egg, oil, banana, sweetener, and milk are combined separately. Bringing the two mixtures together only at the end helps prevent overmixing.

Mixed berries are folded in last. The muffins bake at a relatively hot oven temperature and are cooled on a rack after a clean tester confirms they are done.

Ingredients

  • 1 1/3 cups whole wheat flour
  • 1 tablespoon flax seeds, ground
  • 2 tablespoons wheat germ
  • 1 cup 12-grain cereal or porridge oats
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup vegetable oil
  • 3/4 cup ripe bananas, mashed
  • 1/2 cup sweetener such as brown sugar, maple syrup, or honey
  • 3/4 cup milk
  • 1/2 cup mixed berries

Method

Heat the oven to 400°F (205°C). In a large bowl, combine the whole wheat flour, ground flax seeds, wheat germ, cereal or oats, baking powder, baking soda, and salt. In a separate bowl, beat the egg, then mix in the oil, mashed banana, sweetener, and milk. Add the wet mixture to the dry ingredients and stir just until incorporated, then fold in the mixed berries. Lightly oil a muffin tin and divide the batter evenly among the cups. Bake for 18–20 minutes, until a toothpick or fork comes out clean, then cool on a rack. Makes 12 muffins.
