A Lazy Winter Evening Menu in Under an Hour

The cookbook’s Lazy Winter Evening menu was designed to demonstrate that a varied Ayurvedic-style meal can be assembled in under an hour when dishes are chosen to work in parallel.

The menu combines Spiced Pumpkin Soup, Autumn Tea, Strengthening Tur Dal, Broccoli, Cauliflower & Potato Baji, Grandma’s Turnip Curry, chapatis, Tomato, Feta & Mint Salad, Tamarind Chutney, Coconut & Banana Raita, and a rice pudding dessert.

The speed comes from orchestration rather than cutting corners: start the dishes with longer simmer times first, prepare fresh sides while they cook, and rely on make-ahead chutney or dessert when practical.

Ingredients

  • One soup
  • One dal
  • Two cooked vegetable dishes
  • Chapati
  • One fresh salad
  • One chutney
  • One raita
  • A warming tea
  • One dessert

Method

Begin the soup and dal first, then start the vegetable dishes. While they simmer, assemble the salad and raita, warm or cook the chapatis, and prepare the tea. Use a pre-made chutney or dessert if available. Serve the meal as a sequence of warm cooked foods with fresh and cultured contrasts.
